american strong ale
Empire American Strong Ale is bold, hoppy, and complex. The use of chocolate and roasted malts gives this beer a full malty character. The strong American hops balance this beer with an aggressive bitterness, followed by a fruity hop flavor and a full hop aroma. 9% ABV
Aphrodisiac Ale
Aphrodisiac Ale is a golden ale originating from the area of present-day Scotland, with the addition of local organic honey, fresh ginger, and dried lavender tips. The art of blending herbs into beer dates back to the Picts. The Picts would drink herb-infused beer before going into battle. Other times they would drink it to boost their libido. 6.8% ABV
barley wine
Strong, rich, hoppy and smooth, our Barley Wine is an American version with a high alcohol kick. Flavors of malt sweetness are quickly balanced by an assertive hop bitterness. Hop flavor and aroma are present as well, and the beer finishes with a fruity contribution from our house ale yeast. 12.5% ABV
black magic stout
Black Magic is a traditional dry Irish stout. It is carbonated with nitrogen, and pours very much like a Guinness. Dry roasted flavors are prominent, with hints of chocolate and coffee on the finish. 4.8% ABV
Blueberry Wheat
This seasonal fruit beer is back! A light, crisp American wheat beer flavored with the addition of fresh blueberries. Thirst quenching and very drinkable. 4.5% ABV
By George Pale Ale
This is the winning recipe from the Syracuse Beer Week homebrew competition that was held at Empire. George Aldrich of Utica was the winner. An American Pale Ale, hopped with Chinnook and Amarillo. 5.5% ABV
Cherry Stout
Full-bodied and dry, this stout has the flavor of fresh black cherries. It starts with chocolate and roasted barley flavors, and then finishes with a subtle cherry note. Tastes like a chocolate-covered cherry. 7% ABV
Chocolate Mint Stout
Brewed for the holiday season, this stout was made with dark Belgian chocolate, fresh mint leaves and six specialty malts. Starts with the aroma of fresh peppermint, with the robust flavor of the chocolate next, and finishes with a minty balance. 7% ABV
cream ale
Our Cream Ale is carbonated with nitrogen so it cascades as it pours. This gives the beer an extremely smooth mouthfeel. It is golden in color with a crisp hop flavor and aroma. 5.8% ABV
Critz's Apple ale
Critz's Apple Ale is an American wheat beer with apple cider added prior to fermentation for a fresh, tart, apple taste. The cider came from Critz Farm in Cazenovia. 4.5% ABV
Critz's Pumpkin Ale
200 pounds of fresh hand-picked pumpkins from Critz Farm in Cazenovia are added to the mash of this beer. They are cleaned, cut, drizzled with honey and maple syrup, then roasted in our ovens. The brew is then spiced with an array of fall spices. Pumpkin pie in a glass. 6.5% ABV
Deep Purple
a wheat beer made with NYS Concord grapes. It is fruity, tart & dry, w/ a purple color & huge grape aroma. 6.5% ABV
downtown brown
A delicious Brown Ale made w/ American hops & combined w/ some of the finest English specialty malts available. Rich coffee, chocolate & toffee notes are balanced nicely with the fruity hops. 6.8% ABV
empire state pale ale (ESPA)
Empire Summer Ale
Inspired by a traditional German Pilsner, Empire Summer Ale uses German malt and hops, but is fermented with our house ale yeast. It is finished with dried lemon peel which gives the beer a lemony zing. 6.5% ABV
golden dragon
A Belgian style Golden Ale, spiced with Thai Basil grown at Empire's own organic garden. Light in color and medium bodied. 7.7% ABV
hefe weizen
A German-style wheat beer, Empire’s Hefe Weizen placed first in its category at the 2007 NYS Fair Craft Beer Competition. Brewed with authentic German yeast and malts. Banana and clove flavors are present in this beer due to the yeast that is used. This is typical for the style. 5.8% ABV
hop harvest
Empire Hop Harvest is an American style Pale Ale made with 100% NYS hops. This beer has a strong fresh hop flavor and aroma, with a balancing hop bitterness. 6.0% ABV
india pale ale
an American IPA, hopped heavily w/ 6 kettle additions. It a citrus aroma & bright, earthy flavor. This is our hoppiest beer. 7.2% ABV
Instigator Doppelbock
Bocks and Doppelbocks are German-style lagers. Usually released in the spring in celebration of the new season. Strong, full bodied and somewhat sweet, this beer was fermented with a traditional German lager yeast strain for over eight weeks. 8% ABV
Liv and let rye
A Rye IPA made w/ 30% rye malt. This particular malt leaves a spicy peppery finish to the beer. Hopped w/ American hops, including Nugget, Citra & Falconers Flight, it also has a forward American hop character. 6.5%
maple porter
A dry porter brewed w/ the addition of pure, amber maple syrup from Critz Farms in Cazenovia. This leaves the beer w/ a subtle aroma of maple syrup & a hint of sweetness 6.5% ABV
purple dragon
An unfiltered Belgian Golden style ale, spiced w/ purple basil grown on the farms at Blue Hill at Stone Barns in Terrytown, NY. The fresh herb character of the basil blends nicely w/ the spicy character of the Belgian yeast. 6.5% ABV
Robust Porter
Empire's Robust Porter is the strongest porter we have made to date. It is dry, with a solid hop aroma, bitterness, and flavor. It finishes with roasted flavors as well as a hint of chocolate and a nutty caramel-like aftertaste. It pairs well with burgers and steaks. 7% ABV
Saison
Saisons are Belgian in origin. This style is one of the hoppiest styles the Belgians brew, and ours reflects that tradition. Unfiltered and hazy, spicy and earthy characteristics are present. 5.6% ABV
scotch ale
A dark beer brewed in the tradition of a strong Scotch ale. Sweet and strong, made with a traditional Scottish ale yeast, this hardy brew will make ya see plaid. 7.5% ABV
skinny atlas light
Named after the famous pristine lake from which Empire draws its brewing water, this is one of our lightest offerings. Pale yellow in color, Skinny has the flavor of a light German pilsner, crossed w/ the crisp cleanness you might find in an American Ale. 4.8% ABV.
Smoked Porter
A porter-style beer brewed with an addition of German smoked malt. Medium bodied with a hint of smoke on the finish, this beer pairs great with bbq and meat dishes. 6.5% ABV
Sub-Terranian Ale
A unique beer, a cross between a Belgian farmhouse ale, and a Belgian tripel. Tart like a farmhouse ale, and sweet and strong like a tripel. This is a beer to be sipped and enjoyed in moderation. 9.5% ABV

white aphro
White Aphro is a Belgian style Wit Ale made w/ lemon peel, ginger & lavender. It is fermented w/ a traditional Belgian yeast strain & wheat malt is added, giving it a Belgian white characteristic. 5.6% ABV

The base of this beer is a strong Scottish ale, with the addition of some unique spices. Cardamom and allspice give this hearty brew a holiday aroma and flavor. 7.5% ABV
